UBE FLAN


This is probably one of my favourite desserts ever. A cake and a flan married together. Even better when it's Ube-flavoured.

This cake is also called the "Impossible Cake" because the flan mixture and the cake batter are baked together at the same time but they separate during the baking process. WHY, you ask? Because of SCIENCE!


Flan had a buttery texture that just melts in your mouth with that sweet caramel. Accompanied by the dense and moist Ube cake that is not too sweet balancing everything out into a perfect bite.


Served with: Ube and coconut crumble, whipped cream, and berries

Here's something you don't see every day, a kitchen disaster written on a blog.


Exhibit A: My failed Ube Flan.


I doubled the recipe for the flan mixture wanting to achieve a thicker flan and have a thinner cake but as it turns out, the flan was too heavy for the cake mix that it did not set. Although the Ube cake was already cooked very well and if I would leave it in the oven some more it would've burned or gotten too dry.

So lesson learned, if doubling the flan recipe, double the cake as well so both mixtures will cook evenly at the same time.


Doesn't look like it but it still tasted fantastic!
