To end Islington Golf Club's 100th year and in celebration of Christmas, Chef Johnson decided to throw the club's Board of Directors a fancy fine dining dinner. Fancy but this night was also known as "NO-Cutlery Dinner"

Let's break it down by course! I wasn't able to take photos of this event so all photo credits belong to Chef (from his Instagram).

HORS D' OEUVRES: OYSTER STARTERS Chicken Oyster, Oyster Mushroom, Oyster

COURSE 1: SPRING ROLL

Thin deep-fried brick pastry stuffed with beef tartare, topped with dashi mayo and caviar

COURSE 2: POPSICLE

Avocado Mousse on the bottom, Torched Scottish Trout on a popsicle stick, Topped with Wasabi Mayo, Unagi Sauce, Garnished with Everything Bagel Spice and Puffed Rice

COURSE 3: CHICKEN WING

Chicken Wing deboned, stuffed with pork dumpling filling, deep-fried to perfection, and tossed with gochujang glaze. Topped with garlic aioli, Garnished with micro-greens

COURSE 4: STEAK AND CARROT

Grilled King Mushroom Steaks, topped with Carrot Romesco, Pickled Shimeji Mushrooms, Roasted Pecan Crumble, Garnished with Coriander Shoots and Leek Ash. By the way, it's COMPLETELY VEGAN!

COURSE 5: WHITE CHOCOLATE MOUSSE (MY DISH!)

Blue White Chocolate Mousse spread on a plate using the Islington Golf Club logo template (that we also hand-made), Garnish with pop rocks and dried berries.

This was also an immersive experience by the way- Chef asked everyone to lick their plates and they actually did!

That's about it, friends! I know this is a long overdue post but it was one of our 2023 highlights for Fine Dining dinners. Also a great way to end the the club's 100th year.
